Pressing with separation of the stems. Maceration of the skins with several remontage processes over a 5-6 day period, followed by a temperature controlled fermentation at around 23-25°C. Maturation only in stainless steel to preserve the grapes’ typical fruit aromaticity.
Mezzacorona cultivates this variety exclusively in Piana Rotaliana, Trentino.
Excellent accompaniment to traditional dishes. It pairs well with rich dishes, roasted and grilled meats or mature cheeses.
It has a ruby red colour with violet reflections, an intense bouquet with notes of wild berries, particularly blueberry, redberry, raspberry. It has velvety tannins and is structured.
